This is a recipe from my mom. She usually used apricot jam, but any tart jam will do. I usually use raspberry jam or strawberry jam. The pictures here, I'm using peach jam. It makes 24 squares. Typically I give 8 bars to Will, eat 8 myself, and save 8 for Will's mom. Who will eat one or two. Then later Will and I will split the rest.

Preheat oven to 375.
Add dry ingredients (all but butter and jam) to a bowl. Mix with a wooden spoon.
Cut butter into 1/4" slices. Add in. Cover with mixture.
Mix together with your fingers, squeezing the mixture and trying to break apart the butter slices.
Put 2/3 of the mix into the pyrex. Push it down with your hands into a flat layer covering the whole bottom.
Add jam on top.
Spread carefully with back of spoon so it covers the whole bottom. It would be pretty not to contaminate any of the jam with the mixture, but that doesn't matter. What does matter is that the bottom layer doesn't get torn up, so the jam doesn't get baked onto the bottom of the pyrex.
Sprinkle the remaining 1/3 of the mixture on top of the jam. Spread it around with your fingers. (I tried spreading it by shaking the pyrex, but the bottom layer is just dry mix and doesn't stick to the pyrex so it causes the bottom layer to move around. Don't do that. Just try to sprinkle the top layer on uniformly, then touch it up with your fingers.)
Bake in 375 degree F oven for 35 minutes. Then let it sit somewhere Will won't get at at room temperature for 10 minutes more (otherwise Will will burn his tongue on the hot jam). (I have a second oven, I take it out of the hot oven and put it in the cool oven and time it for 10 more minutes.)
Cut into 24 squares: 6 rows by 4 rows. Fill 3 plates with 8 each.
Eat. These are very crumbly. (It is important to put them on plates, because Will is motivated to wash the pyrex right away. Probably even before he eats his cookies. Taking the cookies out of the pyrex prevents him from eating all the cookies in the pyrex just so he can wash the pyrex.)
